Champagne Ham & Egg Salad Crostini

  • 125g Hans Champagne Ham
  • Baguette, sliced 1cm thick
  • 4 Eggs, hardboiled and finely chopped
  • 2 Tablespoons Whole egg mayonnaise
  • 1 Teaspoon Watercress
  • 2 Tablespoons Crème fraiche
  • 2 Tablespoons Chives, finely chopped
  • Olive oil spray
  • Sea salt & cracked black pepper


  1. Pre-heat oven to 200°C

  2. To make crostini, place the baguette slices on an oven tray, spray with olive oil and bake until golden

  3. Add the eggs, mayonnaise, crème fraiche and chives together

  4. Season with sea salt and pepper

  5. Spoon egg mixture onto crostini, top with ½ slice of rolled Hans Champagne Ham and watercress
