Pesto Pasta with Chorizo & Olives

Ingredients

  • 4 Cups Short pasta (bows, spirals or macaroni)
  • 1 Medium onion, chopped
  • 2 Garlic cloves, chopped
  • ½ Red capsicum, diced
  • 2 Hans Chorizos, sliced
  • ½ cup Kalamata olives, pitted
  • ½ cup green olives, stuffed
  • 1/4-1/2 Cup Basil pesto

Instructions

  1. Boil pasta in salted water and drain

  2. Sauté onion for 2 minutes in 2 tbsp of olive oil

  3. Garlic, capsicum and sliced Hans Chorizo and sauté for 2-3 minutes

  4. Add drained pasta, olives and pesto and mix well

  5. Check seasoning, adding salt, pepper and grated parmesan cheese to taste
