Strassburg & Chargrilled Vegetable Focaccia
Ingredients

1 x 500g Hans Stassburg, thickly sliced
4 small focaccia, panini or 8 slices of sourdough bread
4-8 slices mixed chargrilled vegetables such as, eggplant, capsicum and zucchini
8 semi-dried tomatoes
4 lettuce leaves
2 tbsp pesto
4 marinated artichokes, quartered

Method
  • Slit focaccia or panini
  • Grill bread and Hans Strassburg slices on a ribbed pan
  • Layer bread with the Hans Strassburg, vegetables and lettuce
  • Add pesto, and cover with the bread top
  • Garnish with artichokes
