Champagne Ham, Pinenut & Bean Salad
Ingredients
1 x 125g Hans Champagne Ham
440g tin of butter beans, rinsed and drained
200g green beans
200g yellow beans
2 tbsp Italian parsley, roughly chopped
80g pinenuts, toasted

Dressing
2 tbsp virgin olive oil
1 tbsp lemon juice
1 tbsp red wine vinegar
1 tsp lemon rind, finely grated
Method
  • Blanch beans in boiling water 3-4 minutes, refresh under cold water and drain
  • Add all ingredients, except Hans Champagne Ham, in a large bowl
  • To make dressing, mix olive oil, lemon juice, red wine vinegar and lemon rind together
  • Toss salad well with dressing
  • Arrange salad on a serving platter & fold Hans Monaco Ham slices around the edges
